I grew up in a family where all my aunts and my mom were known for their cooking. We were never allowed in the kitchen to 'help' except for cleanup! I guess I learned by watching and I love to watch The Food Network. I am a registered nurse and love to cook up things for my co-workers.

I tried to duplicate this light refreshing high-protein salad that my Tunisian in-laws make. I put my own 'twist' on this with the addition of lemon zest. Using colorful vegetables makes for a light refreshing salad with a beautiful presentation.

Tunisian -style catfish nuggets

This is a great way to dress up an inexpensive fish and is reminiscent of a Tunisian-style fish preparation. Fried catfish is simmered in a tomato-based sauce w/anise seed, lemon bits, and olives and served over rice or couscous. May substitute with any other fish if desired. This simple preparation makes it the "cat's meow!!"

Simple to make with only 3 ingredients with a variety of uses. Great to use over bundtcake because it sets up nicely. The extra sauce may be refrigerated and reheated to serve over icecream or your favorite dessert. I came up with this once when I didn't have any confectioner's sugar to make a glaze for a bundtcake
