This was delicious. I also used whole wheat flour, to make it more healthy. It tastes very much like honey cake, but without the honey.
I have been looking for a healthy pancake recipe that made thick fluffy pancakes and this is it! I made a few alterations to make it even healthier. First I used 3 oz. flaxmeal and 1 oz. oil instead of the 1/4 C. oil. I didn't have wheat germ, so I used almond flour instead. And since I didn't have soy flour, I used 1 tbsp. black bean flour (which is extremely high in fiber). I also increased the almond extract to 1/2 tsp. In spite of all of these changes, the pancakes were wonderful.
I used frozen mixed berries instead of just strawberries and did have a little trouble getting the cream cheese to blend evenly with the fruit mixture. However, it still turned out great and everybody loved it. I will definitely make this many more times, especially when I have company over.
I put a piece of broiled salmon on top of a serving of this salad (along with some chopped walnuts) and it made a delicious cool summer dinner.
I followed the directions exactly as stated, except that I let the rice cool before adding the other ingredients. It was delicious and wasn't sticky, clumpy or mushy. I'll be making this again.
A geat way to use those beautiful red summer tomatoes - DELICIOUS!
My husband liked this (he likes anything sweet), but I felt it was too sweet and had no other flavors to recommend it.
