An easy mexican style recipe. The recipe uses fat-free sour cream and chunky salsa to create a tasty sauce that can be used over rice or noodles. This is a favorite of our family and my son can't get enough of it.

  • Pre-heat oven to 350 deg F

  • Blend salsa with the sour cream

  • Place the chicken into a baking dish.

  • Pour the salsa-sour cream blend over the chicken

  • Cover and Bake for 35 minutes

  • Remove cover and continue baking for a total of 60 minutes

  • Sprinkle the cheese over the chicken, and return to oven for 10 more minutes

  • Remove, grind black pepper to taste and serve.

  • Use the sauce over either rice or noodles.
