Everyone loves my non buttery sugar cookies that are soft all the way to the edges! For strictly sugar cookies, do not add cinnamon to the decorating mix. To color the cookies, use 2 cups of white sugar instead of 1 cup brown sugar and 1 cup white sugar

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, stir together the flour, baking soda, and salt; set aside.

  • In a large bowl, cream together the shortening, 1 cup white sugar and 1 cup brown sugar until light and fluffy. Beat in the eggs one at a time, then the vanilla. Gradually stir in the dry ingredients until just blended. Roll the dough into walnut sized balls. Mix together the 1/4 cup white sugar and 2 teaspoons of cinnamon. Roll the balls in the cinnamon/sugar mixture . Place cookies 2 inches apart onto ungreased cookie sheets and flatten slightly.

  • Bake for 8 to 10 minutes in the preheated oven, until lightly browned at the edges. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
