I have Celiac Disease, which means that I can't eat anything with wheat, rye, or barley. I also have a few other food allergies (dairy, eggs, beef, peanuts), so I am always looking for good recipes that accommodate my diet or can be easily adapted. I wasn't much of a cook before I was diagnosed in 2004, but I am learning a lot and I am actually having fun with it. Eating gluten free is actually not too bad at all if you make things from whole foods. It's all that prepared stuff that gets tricky.
