Ok, this is not a Hawaiian recipe, but it is my copycat of a wonderful dish served in a famous Hawaiian restaurant in California. The sauce takes a little time, you can make it that morning or a day before serving to make this a breeze. I serve on jasmine rice spiked with carrots and peas.

Italian Pressed Sandwiches

These cold sandwiches are perfect for picnics, tailgates, and packed lunches. The flavors pop by pressing the sandwich overnight in the refrigerator with weights on top, sometimes referred to as "brick" sandwiches. I use old textbooks as weights, but feel free to use bricks if you like! For a really cute presentation I wrap each serving in parchment paper and tie with baker's twine.
