Best Italian Sausage Soup
This is one of my favorite soups and it always gets rave reviews! Salad, hard rolls and wine make a meal! You can make this 24 hours ahead of time without the noodles and wait to add the spinach noodles until soup is reheated for serving. Yummy! Serve topped with grated Parmesan!
Sausage-Stuffed Acorn Squash
This sausage-stuffed acorn squash was a favorite in my family when I was growing up. Now that I'm married, it's one of my husband's favorite dishes. We call it "squasage". It's a great way to use up that abundant, reasonably priced, tasty fall squash.
Company Chicken Marsala
A great company dish. The secret is to not cook the chicken all the way through when browning. Brown in batches if needed. It comes out nice and tender this way. Serve with rice or linguini and a side salad.
Amazing Cucumber Basil Salad
I created this salad because I had lots of fresh veggies and herbs from my garden that needed using up. It is so good, and because it makes its own dressing, it's very healthy as well. The flavor is best when left in the fridge overnight.
The color of this dip is very festive and would make a nice addition to any snack or appetizer table at your next holiday party.
Crustless Spinach Quiche
This crustless quiche made with spinach and Muenster cheese is quick and easy!
Chef John's Eggplant Escabeche
This spicy preserved eggplant is a refreshing and vibrantly-flavored side dish or appetizer served on grilled bread.
