  • Heat oil in a large stock pot until shimmering (not burning)

  • Add diced onion, and sautee for 3 minutes

  • Add bag of shredded cabbage, and sautee another 3 minutes

  • Add carrots

  • Add one can of diced tomatoes

  • Add one box of chicken broth

  • Add 1 tsp salt (or to taste)

  • Add 1/2 tsp pepper (or more for a spicy soup)

  • Bring to a boil

  • Cover and simmer for 1.5 hours
