Great dish. easy and quick. we live in a warm climate and it was perfect for the summer weather. we made it over Mexican rice and the two went perfect together

Awesome recipe. I did follow some advice from other reviews. I added 1 cup of walnuts and saved some to sprinkle on top of the loaf. I also added 1 tsp of vanilla and 1 tsp of cinnamon and did 1/2 cup of white sugar and 1/2 cup of brown sugar. Some good advice was not to over mix the dough. I also sliced the bananas I stead of mashing them. The sliced bananas hold more moisture allowing the whole loaf to be softer and and more moist. One last modification, if you have access to goose or duck eggs, try baking with them instead. The goose egg I used made the bread more fluffy.
I added Poblano peppers to make it spicy and it was awesome!
