Vegan Mac and No Cheese

This has become a family favourite. I didn't change a thing, except that I use safflower oil instead canola. We like it better than traditional macaroni and cheese, and we are in no way vegan!

This was a little gooey-er than I was expecting, but still delicious. I only had 2 cups of rhubarb left in my garden, so I added a cup of chopped apples. I'm sure cherries or peaches would also have worked, but I liked the apples because they were right in between the rhubarb and the strawberries on the tart-to-sweet spectrum. I also mixed the fruit with lemon juice before folding it into the batter, as another reviewer suggested, and it worked quite well.

These were just okay. My toddler loved them, which is really what I was looking for, but for myself I would add some cinnamon and/or nutmeg to increase the flavour. They were a bit bland as is.

Caramelized Red Bell Peppers and Onions

This was excellent. I was looking for a new way to make caramelized onions to add to a basic perogies dish and this was perfect. I used yellow onion instead of red as that's what I had on hand. Delicious!

Quinoa Black Bean Burgers

I made these at least four times last summer and they were amazing. Simply the best vegetarian burger I've ever had, and so easy.

Garlic-Seasoned Baked Pork Chops

This wasn't bad. I would definitely use a meat thermometer much earlier in the process to avoid over cooking like I did, but it was decent, fast and easy.

Easy Roasted Broccoli

These were great. I used garlic salt instead or regular salt to add a bit more flavour. I also roasted at 425F so it could share the oven with another dish, so cut the time down to 15 min. Delicious and easy.

Spicy Slow-Cooked Chili

This is great! I made it as is except I cut down the spice to 1 tbsp. chilli powder and 1 tsp. cayenne. It was still a tad spicy for my mild tastes, but it does say so in the title! Just take it seriously.

No-Cook Overnight Oats with Yogurt

I have made this 4-5 times now. I use vanilla instead of cinnamon, as others suggested. This gets the ratio just right, so I also use it as a base for other flavours. (Others have turned out too thick or too funny). DO NOT SKIP the chia seeds! I think they are essential to a successful overnight oats recipe.

Oatmeal Almond Butter Bites

These were tasty, but harder to make than similar recipes. I don't have a standup mixer and so used my hands. Mistake! I couldn't get the almond butter to mix very well and so had a lot of other ingredients left over that wouldn't form into balls. I saved it by adding peanut butter and honey to the rest. I think this could be easier by letting the almond butter come to room temperature. Otherwise good!

This was amazing. I came home from a trip to Nashville with a craving for banana pudding. This was even better than what I ate down south! It gets even better the second day. Yum.
