I am a Registered Dietitian who loves to cook and bake! I love experimenting with new ingredients and challenging myself to "use up" something in the kitchen in a new fun way! Due to some health issues, I tend to make mostly gluten free or grain free recipes for myself, but for my family-anything goes! We have 2 loveable social cats! I have 3 grown step children and a 17 year old daughter still at home.

This was a big hit! My husband loves Mounds candy bars so I thought I would try making this for his birthday! He took it to work and people were coming from all over the building to eat this wonderful rich cake...It is sweet and you only need a small piece.

Rhubarb Crunch

This is my go to! It uses alot of rhubarb and I usually add a cup of frozen berries (like strawberries or even a blend of berries)! It is so easy and so good! Never disappoints.

Granola Bars III

These were great! Super easy to make! I did make a few tweaks though. My family is not big on walnuts so I replaced the walnuts with sliced almonds and used almond extract instead of vanilla. Turned out yummy!

Liver and Bacon

This was really good! I did add onions to the bacon grease after taking out the bacon but otherwise followed the recipe. We were not sure we even liked liver prior to this. Would definitely give it a try!

Potato and Ham Stew

I was looking for a good ham soup to use a ham bone. This turned out to be great. I cooked just the ham bone with onion and celery for the first hour or so and then later added the other ingredients so they didn't boil as long. My family likes their vegetables still on the "al dente" side. Good recipe!

I made this recipe for a Christmas gathering. I was a little concerned with how much to use of the chili peppers in adobe sauce. I ended up using 1-2 peppers minced finely and a bunch of the juice from the can in a double batch. They were a huge hit! Everyone raved about them and this was a typically quite picky crowd! Definitely worth a try!

Gluten-Free Cheese and Herb Pizza Crust

I was looking for a wheat free pizza recipe but cannot tolerate garbanzo bean flour. I used a wheat free blend (mixture of sorghum, tapioca and arrowroot) and then followed the rest of the recipe as is (sans garlic) due to intolerance. Only thing I needed to change was to add and extra 1/4 cup (used 1 1/4 cup total of the flour mixture). Really good flavor and love having an option for pizza crust that I can eat.

Good traditional salad! I felt this got a little too "soupy" and when I make it again, I will cut down the milk.....concerned that the cookies will be completely soggy in a short time. But very good flavor!

Caramel Macchiato Banana Bread

It is good- But very different from the usual-I think its the coffee that makes it so different.Definitely worth a try and adding to your collection of quick bread recipes!
