Dill Wrapped Cream Cheese

This is fabulous, but I can't imagine eating it without crackers or fruit slices. I used light garlic cream cheese and more dill than the recipe calls for and it was wonderful. I baked it right on Fiesta Ware and did not use flour to pinch together triangles, I don't think that is necessary and would cut the taste down. My guests asked for the recipe!

Spinach Stuffed Chicken Breast

This is delicious. I would use more pepperjack and a teeny bit more sour cream to make the chicken not so dry. I may have had to over cook it to get the bacon cooked through. Will make again for sure.

Slow Cooker Ham

This was EXCELLENT. I accidentally bought a bone in, spiral cut ham (didn't know they had those) and it was a little overdone, but excellent, excellent taste! I made the bean soup with the bone afterwards. Delicious.

Bean Soup

This soup was excellent, although it took longer to cook than suggested. May have been because I used slightly larger beans than navy beans. Should have used "small white beans" b/c I couldn't find Navy beans in the store I stopped at. I used the ham from "Slow Cooker Ham" on this site. Wonderful. My dad also added a bit of cabbage to his soup when he made it to thicken it up a bit, and it was excellent as well. I also used 6 cups of chicken broth and one cup of water.

This recipe is wonderful. I would double the recipe if I were you as it goes fast.

Peanut Butter Vegetable Chicken Soup

This is incredible. The vegetables are so fresh. I thought the tomatoes would make it weird, but it really makes it great. I just used canned diced tomatoes. The timing of everything is great; nothing was too mushy or underdone. Try this, you won't regret it!

Bran Flax Muffins

This is really good. I have not cooked with flax or oat bran before, but wanted a healthier quick breakfast muffin. I was very skeptical, but it really is great. I'm so glad I bit the bullet and tried it. My 18-year old daughter admitted she liked them as well. :-)

Beef Tenderloin with Ginger-Shiitake Brown Butter

I think this would be very good, but I used Costco tenderloins, which are basically mini roasts, and I didn't cook them long enough...had dinner for 10 and everyone loved it; I was the only one disappointed. Definately double or triple step 3. Will definately try again.

Garden Pasta Salad

This salad is really great. I followed it to a "T" except I misread the "Red Gold Basil, etc." and put in Rotel tomatoes with Green Chilis. It turned out fabulous. Everyone actually liked the bite the green chilis gave it. Who knew? I will try it the "right way" and see the difference.

Catherine's Spicy Chicken Soup

This is really great, and very forgiving....I didn’t have any chili beans, so I used kidney beans….I didn’t want whole tomatoes in there, so I used one can of black beans….I didn’t have garlic powder (who doesn’t have garlic powder?) so I used minced…I used light sour cream, I think I used parsley flakes instead of dried parsley..that sort of clumped up, but you just stir it...I am going to try it with green chilis in it too and tone down the salsa a bit....I will make this a lot this winter!! Thanks for the recipe!!

Sour Cream Chops

This is excellent. I actually made it exactly as is, and it is very good. The sauce is a little thin, so I would use whole milk maybe (I used fat free). I also removed the pork chops and added the sour cream to the sauce and it thickened up a little bit. Excellent!
