These cookies were delicious, especially with coffee! I made little 2.5” round disks with my hands before setting them on parchment, otherwise they would stick, if pressed down. Then enclosed the filling kind of like a taco, by pinching them together and then carefully rolled into balls and pressed lightly to flatten. It was hard to keep the filing inside snd I had about a 1/4 cup leftover.
Muffins turned out great and I used fresh strawberry pieces I cut and froze first. Made a 1c. powdered sugar, 2Tbl. fresh lemon juice & 1tsp. lemon peel glaze. 💛
