Great spring recipe and very easy to prepare. Full of flavor and the avocado and parmesan add a refreshing touch.

Great recipe for a cold evening. I omitted the Swiss chard as we are not used to eating it with the greens. Doubled the recipe for leftovers!
Based on previous comments I was concerned the dish would be too mushy as I was looking for the consistency of a creamy mashed potato. Used grated Parmesan cheese and added chives and sprinkled more grated Parmesan on top and it melted over the cauliflower. Next time I’m going to use bacon bits and shredded cheddar for a different spin.
