Hi! I am a displaced meeting planner living in a Western suburb of Chicago. I spent most of my childhood years living in a small town about 50 miles south of St. Louis, MO (hence my southern roots). So, why am I on here???? I'm passionate about food - I love to search for new recipes (I rarely EVER make the same thing twice!), collect cookbooks, watch cooking shows on the Food Network and cooking channels, cook and EAT my creations haha! When I'm not in the kitchen, I enjoy traveling, working on house projects and spending time with family, friends, my husband and our Westie, Finn! :-) I take great pleasure in making memorable meals for the people I care about and

Mickey's Sinful Chocolate Mousse

This is SOOOOO good!!! Everyone I've ever served this to wants seconds - and thirds! The evaporated milk gives this mousse it's extra-rich, creamy texture. If you're counting calories (who isn't??!?!?), you can slim this down quite a bit by subbing fat-free evaporated milk, sugar-free, fat-free pudding and fat-free whipped topping, but it's worth indulging in the full experience at least once. :-)

German Meatloaf

I LOVE German food! I have been making this receipe for so long, I can't remember where I got it from. This is best served with spatzle, Bavarian sauerkraut, slices of rye or pumpernickel bread and some good 'ol German beer to wash it down. Enjoy!

Mickey's Yummy Bananas Foster Pancakes

When vacationing at Disney World, I had the most AWESOME banana pancakes for breakfast. I think I've come pretty close to the original here. Aloha!

Meaty Slow-Cooked Spaghetti Sauce

I stumbled upon this recipe when I was gifted with my first slow cooker. It has remained a favorite of mine ever since. I've made a few changes to better suit my tastes - and I think my version is even better than the original! I like to serve this easy meal with Caesar Salad Supreme and Garlic Bread Fantastique, two of my favorite recipes from this site. I hope you enjoy this as much as I do. Bon appetit!!!

Herby Beef Stew

I've been making this for years - it's just that good! Chock full of fresh vegetables, herbs and meat, this stick-to-your ribs stew is sure to warm you up on a cold winter's day. I like to serve steaming bowlfuls with buttermilk biscuits on the side. Easy peasy!

Pizza in a Pot

I LOVE, LOVE, LOVE this recipe! It's like eating pizza, but in pasta form. I like to stop by the "Hut" for an order of their breadsticks to serve on the side. Add a bagged salad mix and you've got a warm dinner on the table with very little effort involved. Enjoy!
