The overall taste was fine but there was no "crisp" in this dish. I checked after 8 minutes and removed it from the microwave because it was mushy. Sorry.
Don't expect these to be like the stuffed peppers made with meat--they're not, but they are excellent. I used vegetable bouillon when cooking the quinoa, & added raisins and chopped pecans.
Definitely needs some spices but otherwise, this is not your generic banana bread!!! I followed the advice of another reviewer and used 1/4c oil & 1/3c applesauce instead of the butter.
I forgot the mustard and skipped the honey and it was good but really too sweet; perhaps the mustard would have toned down the sweetness.
