Butter Lettuce Salad with Dijon-Tarragon Vinaigrette

Butter lettuce, snap peas, and radishes paired with a simple vinaigrette make a wonderful spring salad.

  • 3 tablespoons extra-virgin olive oil

  • 2 tablespoons white wine vinegar

  • 2 tablespoons minced shallot

  • 1/2 tablespoon Dijon mustard

  • 1/2 tablespoon chopped fresh tarragon

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 (5- to 6-oz.) package butter lettuce, torn or chopped

  • 1 cup sugar snap peas, halve on the bias

  • 4 radishes, thinly sliced


  1. For vinaigrette, shake together oil, vinegar, shallot, mustard, tarragon, salt, and pepper in a Mason jar until emulsified, about 30 seconds.

  2. Put lettuce, peas, and radishes in a serving bowl. Add vinaigrette; toss to coat.
