Bring to a simmer, stirring occasionally, until sugar has dissolved, 2 to 3 minutes. Allow to cool for 10 minutes; stir in brandy. Pack cherries into clean jars; pour syrup over the cherries, making sure they are submerged. Cover the jars, move to the fridge for at least 1 day before using, and keep stored in the fridge. Cook's Notes: When adding brandy, taste as you go to be sure the syrup is to your liking, and make adjustments if necessary. If you’re a cherry juice drinker, feel free to substitute cherry juice for water for more cherry flavor. You can skip the star anise (I use Badia®, very inexpensive), but it does give a unique flavor to the cherries.
