The heat in this sauce is moderated by sesame oil, rice wine vinegar, honey, soy sauce, ginger, and garlic. If you like it hot, simply add more gochujang until your taste buds yell, "Uncle!" Line a sheet pan with aluminum foil; place a baking rack on the foil. Whisk gochujang paste, rice vinegar, honey, sesame oil, soy sauce, ginger, and garlic powder together in a small bowl to make a sauce. Pat chicken dry with paper towels; brush both sides of chicken pieces with sauce. Place chicken on the rack in the prepared pan. Bake chicken in the preheated oven, until chicken is no longer pink in the center and juices run clear, 30 to 35 minutes. An instant-read thermometer should read at least 165 degrees F (74 degrees C). Sprinkle with cilantro and sesame seeds, and serve with lime wedges. Cook's Note: Gochujang and soy sauce are very salty. To keep salt levels down, there is no added salt in this recipe.
