As delicious treats go, rice pudding's a triple threat -- it's super-easy to make, very versatile (as these recipes show), and a genius way to use up leftover rice. So make extra rice, it's time for a trip around the world in a rice-pudding bowl.
This India-inspired basmati rice pudding is made with coconut milk, raisins, cardamom, and toasted almonds and pistachios. "This is a very flavorful Indian rice pudding," says PATRICK7. "It's the best rice pudding I've ever had, and very easy to make!"
"This Arroz con Leche is the Cuban version of rice pudding," says gator10. "It's richer and sweeter than regular rice pudding. Being Cuban myself, I prefer this version of this delicious dessert to any other. Before serving, sprinkle with cinnamon or garnish with a cinnamon stick, for flair."
Rice slowly cooks in milk with unsalted butter, becoming extra creamy and tender. Cardamom, sugar, and a topping of melted butter make this porridge real Scandinavian comfort food. "This is a delicious rice dessert known in our family as 'Rumagrit,'" says MaryBeth B.
A Filipino coconut dessert, glutinous white rice, also known as sticky rice or sweet rice, cooks with coconut milk and is baked with a coconut topping. "Biko is one of my favorite desserts," says Beya. "This recipe came out tasting better than the biko I buy at the Filipino store."
Scented with cinnamon, this arroz con leche is a Guatemalan version of rice pudding.
"Yummy Japanese dessert and comfort food," says Cynthia. "Good served cold or hot. Japanese desserts are not too sweet, more like European-style."
This Swedish rice pudding is baked to create a rich dessert that's creamy on top and dense at the bottom. "A favorite with Swedes in our Swedish organization," says KOKO48. "Serve with whipping cream and/or sweetened berries, if desired."
"A yummy, custard-like rice pudding that will remind you of home if you grew up in Newfoundland," says Cathy. "I was searching for years and upon guidance from my aunt and some tested recipes, I fine-tuned a yummy result! Eat this pudding as is or top with whipped cream, tin of cream, or milk to your liking."
Here's a German version of rice pudding. Garnish with fresh seasonal fruit, such as blackberries. "Everyone loved it," says Baking Nana. "This makes more than 4 servings because it is so rich. An easy, yet special dessert to make ahead for entertaining. Note: Cinnamon would be a great addition and then serve with spiced apples instead of berries.
"Greek rice pudding is simple, comforting, and delicious," says Diana Moutsopoulos. "Some people in Greece make it with eggs, but my aunt prefers without. Best enjoyed cold -- if you can wait that long!"
Beaten eggs added at the end create a rich Portugal-inspired rice pudding. "My mom would always make this delicious, creamy rice pudding when we were kids," says John Pacheco. "If a thicker rice is desired, increase rice to 1 1/4 cups and add another egg. Sprinkle with cinnamon."
