These recipes are terrific choices for all types of leftover roast pork, including pork loin, pork tenderloin, pork shoulder roasts, and even pork chops. So go ahead, make a big pork roast on Sunday, and use the leftovers to make these quick-and-easy weeknight meals.

1. Yummy Pork Noodle Casserole

Turn your leftover pork roast into a yummy egg noodle casserole. "This is one of my favorite comfort food recipes," says cjscott.""Sour cream gives it a little twist. Red pepper and corn give it color and flavor. You can add and subtract any vegetables in this versatile recipe."

2. Pork Lo Mein

Slice up your leftover pork roast and add it to this classic Chinese noodle dish. It's ready in about 30 minutes. "This was so simple and I loved it," says Vivian Li. "I made it for my very traditional Asian parents and they ate all of it."

3. Pork Fried Rice

Cubes or strips of leftover pork roast also make sensational fried rice. "I couldn't believe how good this is and how easy," says cchef. "I used leftover pork roast and brown Thai rice. Best fried rice I ever made! All with leftovers. Amazing."

4. Classic Cuban Midnight (Medianoche) Sandwich

Here's a classic, the grilled Cubano sandwich. Slice your leftover pork roast thin and serve it with slices of ham, Swiss cheese, pickle, and lots of mayo and mustard on a sweet bread roll. "This is one of the more famous sandwiches straight out of the island of Cuba," says Pretty Pink Bullets. "This recipe came from my uncle who used to work at a restaurant in Pinar del Rio, Cuba, and now works at a Cuban cafeteria here in Miami."

5. Pork Supreme

"This is an easy and great way to use up leftover roast pork," says Sudie Blanchard. "It's a family favorite!" Simply combine leftover pork roast with sauteed mushrooms and onions in sweet and savory tomato sauce.

6. Pork Stroganoff

Use strips of leftover pork roast in place of beef in this creamy stroganoff. "Pork stroganoff is just as good as beef, if not better," says RC2STEP. "Pork, mushrooms, and onions in a creamy sour cream sauce. Yummy!" Actually, this recipe calls for pork chops, but leftover roast will be just as tasty.

7. Nippy Pork Salad

Here's another great idea for using up leftover pork roast. Serve it chicken- or tuna-salad style, with chopped celery, green onions, Dijon, mayo, horseradish, and a dash or two of hot pepper sauce. "Delicious pork that can be served on sandwiches, crackers, or just on the side with another salad," says Lerie. "Best if left in fridge at least 4 hours before serving. Great next day, too."

8. BBQ Pork Pizza

Pop your pork on a pizza. Spread a saucy foundation of BBQ sauce on the pizza dough and lay down shredded leftover pork roast, along with thinly sliced red onion, slices of dill pickles, and shredded mozzarella cheese. "This was a very good way to use up leftover pork," says Marcella. "Be sure to use the dill pickles. I actually wish I would have put a few more on, because they added to the flavor of this dish. Easy to make, too."

9. Sunday Brunswick Stew

Add it to a stew! "This is a sweet and spicy stew that you start in the morning and let the slow cooker do the rest," says rrilcoe. "It's packed full of vegetables, pork, and butternut squash. It's a great way to use leftover pork roast or pulled pork! Perfect paired with cornbread muffins."

10. Leftover Pork Roast BBQ Wrap

Shred your leftover pork roast and wrap it up with onions, Cheddar cheese, and BBQ sauce in flour tortillas. Christine gives this recipe 5 stars: "I used the very dry pork roast I made in the crock pot," she says. "I rolled up the tortilla and stuck it in the microwave for 45 seconds, and it came out hot and yummy."
