Here's a meat-free Thanksgiving line-up that will delight every guest. These vegetarian Thanksgiving recipes lean heavily on hearty, healthy, seasonal vegetable dishes.

If you're not vegetarian yourself but are cooking a traditional Thanksgiving dinner for guests who don't eat meat, keep a couple quick things in mind: Ask your vegetarian guests if they eat eggs and dairy; avoid serving (or have vegetarian versions to offer) stuffing that has been cooked in the turkey or that contains chicken broth, gelatin, marshmallows (which contain gelatin), foods cooked in bacon drippings, and meat-based gravy. Celebrate the harvest with portobello or pumpkin pasta, tofu turkey, or veggie pot pie. A tofu turkey can be packed with stuffing, basted, and baked just like a bird for several hours. Serve with all the trimmings -- gravy, mashed potatoes, and cranberry sauce.

Vegetarian Dessert Recipes for Thanksgiving

Unless you favor lard-based pie crusts, a whole range of traditional Thanksgiving dessert recipes should be vegetarian safe. Many vegetarian pies can be turned into vegan simply by using an oil crust and swapping in soy or almond milk in place of the dairy.
