Easy, healthy chicken casseroles.

These satisfying comfort-food casseroles take a walk on the healthy side. They do it primarily with boneless, skinless chicken breasts, plus fresh or frozen vegetables, quinoa, brown rice, and other healthy whole foods. They're ideal for busy worknights and lazy weekends alike!

The Best Healthy Chicken Casseroles

Quinoa, black beans, and skinless, boneless chicken are just the beginning of the healthy foods in this casserole. "Delicious and has a nice kick," says LoriT. "Added frozen corn, as another reviewer recommended. So good it doesn't need the sour cream or cheese!"

Diced sweet potatoes and carrots combine with skinless, boneless chicken breasts, garlic, and onion. Dry white wine and chicken stock keep everything moist as the casserole cooks. "This is the tastiest chicken dish that I have ever tasted," says RACHEL. "The sweet potato adds an interesting addition to the chicken, alternatively butternut squash can be used in its place."

Tomatillos, serrano peppers, garlic, and shredded chicken combine deliciously in this Mexican classic. Big flavors are built right in, so you can "be conservative with the cream and the cheese," as Gema recommends. It's also a great candidate for using up leftover or store-bought rotisserie chicken.

Chicken breasts combine with frozen okra, brown rice, and cream of mushroom soup. "Okra, when cooked, give off a substance that thickens any liquid in which they are cooked. That makes this chicken rice casserole A-OKRAY!" Missliss also gives it 5 stars, and says: "Love Okra, and LOVE how this recipe has REAL veggies and brown rice. This is great with a variety of veggies -- frozen spinach, etc. I feel good serving this and variations with other veggies to my family often."

This colorful baked chicken casserole combines chicken breasts with fresh zucchini, tomatoes, and basil. "This was a wonderful dish," says Kaley. "Easy, delicious, and used up some of the surplus of vegetables we had on hand."

This Cuban-influenced casserole features chicken baked with onions, bell peppers, and water chestnuts, along with cooked yellow rice and diced pimentos. "Very tasty," says Anne. "I used orange bell pepper and chicken breasts instead of a whole chicken -- it's a little healthier. My entire family enjoyed this, even the picky kids."

Cottage cheese adds a light texture to these shredded chicken enchiladas with chopped green chile peppers and red enchilada sauce. "This recipe offers an excellent blend of incredible ingredients and flavors," says CINDYSHELLS. "This will certainly become a regular delight."

Homemade cream of chicken soup creates the base for this broccoli, hot pepper, arugula, and chicken casserole. "This is my slightly healthier and much spicier version of this yummy comfort food," says tolunda. If you're not so keen on spicy food, cut back or omit the habanero and serrano peppers.
