Finally, a word about cleaning your sheet pan. For best results, give it a quick wash with hot soapy water. It's best to get to the job early before the charred bits can really get caked on. If a quick clean doesn't get the job done, mix up a little slurry of baking soda and white vinegar and spread it into the troublesome bits. For really tough spots, let the paste soak in for 15 minutes or so. Then rinse using a sponge or cloth to wipe clean. Give it another quick wash with soap and water.
