Two things I love about a simple recipe: 1) If I'm zoned out after work, I don't have to think to make it. 2) If I'm not zoned out, I can spend some time thinking up new variations. If you don't like the looks of the cod at the store, most types of fish will work for this recipe—Spunky Buddy used sea bass. You could do sole, flounder, haddock, red snapper. Just adjust the cooking time based on the thickness of the fish.
