1. Portobello Penne Pasta Casserole

2. Chili Rellenos Casserole

3. Zucchini Herb Casserole

Cubes of zucchini are sauteed with green onions and garlic, seasoned with basil, paprika, and oregano, and baked with cooked rice, tomatoes, and cheese until bubbly. "Delicious -- the best zucchini casserole recipe I've ever tasted," raves Valerie. "I particularly liked the fact that the squash is cubed, rather than sliced. When cooked, the squash retains its texture better and doesn't get mushy.

4. Carol's Baked Ziti Casserole

Enjoy layer after delicious layer of ziti pasta combined with a creamy ricotta mixture, spaghetti sauce, and shredded cheese. "Packed with cheese, sauce, and pasta, this baked casserole is as comforting as it is filling," says Carol.

5. Healthy Broccoli Cheese Bake

Here's a healthier take on broccoli casserole. It combines broccoli florets with sauteed onion, bell pepper, and mushrooms, and a topping of whole-grain bread crumbs and a Romano cheese mixture. Nat rates it five stars: "Excellent! Used fresh broccoli with great results!"

6. Hariton's 'Famous' Vegetarian Casserole

Chunks of eggplant, potato, green bell pepper, onion, summer squash, and tomato combine with green beans, mushrooms, garlic, herbs, and tomato sauce. "Wonderful! What a great blend of flavors," says LAURIESUE.

7. Zucchilattas

"Zucchini, mushrooms, onion, and tomatoes are cooked until tender, wrapped in warm tortillas, topped with cheese and baked until bubbly," says Barbie. "This is a great way to use some of the fresh garden vegetables."

Lasagna noodles, mushrooms, spinach, and pasta sauce combine with ricotta cheese, Romano cheese, oregano, basil, mozzarella cheese, and Parmesan cheese. "The best meatless lasagna I've ever tasted," raves COOKNCOOK1.

9. Black Bean and Rice Enchiladas

Black beans and brown rice combine with bell peppers, picante sauce, and salsa in these vegetarian enchiladas. "This recipe is amazing," says VGreen. "We recently went meatless, and this is one of our favorite dishes! You don't miss the meat, it's filling, and low cal."

10. Vegetarian Moussaka

Seasoned lentils take the place of meat in this Greek-inspired comfort food classic. "Very tasty, an excellent blend of flavors," says mistril. "Grilling the vegetables instead of frying was a great idea, tasted great and a time saver."

11. Veggie Pot Pie

This meatless pot pie features carrots, potatoes, cauliflower, green beans, and mushrooms in a savory sauce. "This was soooo good," says Beth. "I've never tasted anything so delicious. In fact, I think it's better than most any chicken pot pie I've ever tasted. It was DELICIOUS!"

12. Creamy Pasta Bake with Cherry Tomatoes and Basil

Here's a delicious creamy baked pasta dish featuring penne pasta, cherry tomatoes, basil, and cheese. "One of my favorite midweek pasta bakes," says Julian. "There is not much prep and my whole family loves it. Once the pasta bake is in the oven, you can make a salad or set the table and then it's time to eat."
