Simple one-pot meals with Brussels sprouts

These recipes are complete meals that feature fall and winter's favorite vegetable, Brussels Sprouts, along with roast chicken, beef, pasta, pork, and other worthy partners. Brussels sprouts aren't so much of a supporting player here as an equal partner in the pursuit of the perfect weeknight dinner.

1. Pan-Roasted Chicken with Lemon-Garlic Brussels Sprouts and Potatoes

You'll roast bone-in chicken breasts over a bed of lemony, garlicky Brussels sprouts and quartered red potatoes. "A delicious one-pan dinner that tastes like you cooked all day but only takes a small amount of hands-on time," says LAMBR. "Great flavor and easy clean-up! We make extra sprouts, my family loves them."

2. Kielbasa with Brussels Sprouts in Mustard Cream Sauce

Kielbasa combines with Brussels sprouts, white beans, and mustard. "I'll tell you that it works wonderfully," says Seattle Food Geek. "The saltiness of the pork combined with the bitter, gentle crunch of the Brussels sprouts and mildness of the beans is well-balanced perfection. Plus, it's cheap, easy, and looks good on a plate!"

Delicious and healthy fall comfort food with Brussels, cooked spaghetti, olive oil, lemon juice, capers, and tahini paste. "This dish is vegan," says hilpete, "and my meat-eating husband loved it."

4. Brussels Sprouts and Feta Pastry Roll

These impressive but easy-to-make puff pastry rolls are stuffed with a savory filling of Brussels sprouts, walnuts, almonds, and feta cheese and baked golden brown. They make a crispy appetizer pastry or satisfying vegetarian main dish. "My roommate used to call Brussels sprouts 'Little Horribles' -- well, not any more! 5. Brussels Sprouts 'n Gnocchi

This one-skillet dinner is perfect for busy weeknights. Fresh Brussels sprouts are thinly slice and sauteed in olive oil with prepared gnocchi, chopped onions, and minced garlic -- and on the table in about 30 minutes. Brighten up the flavors with a squeeze of lemon juice and a pinch of red pepper flakes. "An easy, healthy meal," says db590.

6. Brussels Sprouts Pizza

You'll pan fry thinly sliced Brussels sprouts with garlic and pancetta in olive oil, toss with mozzarella cheese and a little fennel seed, and bake all the good stuff on pizza crust. "Truly a wonderful gourmet pizza," says Mixit. "Every ingredient worked beautifully together and the fennel seeds give a special touch. I added a tiny bit of red chili flakes before eating which was a nice addition. Great way to get your kids to eat their Brussels sprouts."

7. Autumn Rainbow Sheet Pan Dinner
