Fresh Vietnamese Spring Rolls are a wonderful way to welcome the arrival of spring and fresh veggies. These low-carb, low-fat rolls are comprised of lettuce, fresh herbs, matchstick-cut vegetables, rice noodles, and meat, all rolled up in a transparent rice wrapper. Eaten plain, the rolls have a light flavor, accented by basil and mint with a crispy crunch from the raw vegetables. This subtle flavor makes them a perfect pair with traditional dipping sauces such as hoisin, peanut, and fish sauce.

These fresh-tasting, healthy rolls can be a nice substitute for the usual sandwich in your lunch. Just assemble them in the morning or the night before, and wrap them in plastic wrap. Like a sandwich, they are eaten cold. Just unwrap and dip!
