And if you have leftover rotisserie chicken, you can make the tastiest homemade chicken broth, as well as salads, wraps, enchiladas, and more with the leftover meat.

Lime Chicken Tacos

This recipe has been made over 2,000 times, and is a clever way to use up cooked chicken. We served ours with fresh tomatoes, radishes, and cilantro for an extra pop of color and flavor. Instead of Monterey Jack you can also use queso fresco like we did. "This is a restaurant-quality recipe that's quick and easy," raves SPJENSE. "This is a great way to use up leftover chicken -- I used rotisserie chicken, and it turned out great."

Cheater's Chicken Chili

This is the fastest chili you'll ever make, and requires just a few pantry staples. We served ours with Pepper Jack cheese, slivered radishes, and fresh lime. Yum! "You could also serve this chicken chili over tortilla chips for a great nacho dish," suggests Vicki.

Mexi-Chicken Salad

This quick recipe can be modified to suit your tastes. Make it with whatever salad ingredients you have in the fridge. Here is how we made the recipe featured in the video above.

  • Shred a chicken breast with two forks
  • Toss onto a bed of chopped romaine lettuce
  • Cut fresh corn off the cob and toss on top
  • Toss in a handful of cooked black beans
  • Add some queso fresco
  • Sprinkle in some sliced green onions
  • Mix in a dollop of ranch dressing
  • Top with sliced avocado a more green onions

What's the best way to reheat a rotisserie chicken?

Okay, so the above are several simple ways to use leftover rotisserie chicken. But let's say you just want to reheat the whole rotisserie chicken instead of shredding it to use as an ingredient in simple weeknight dinners. Here's how to do it:

1. Remove the chicken from its packaging and place it on a baking sheet and cover the bird with aluminum foil.

2. Place it in a preheated 350 degrees F oven. The foil will help keep the meat from drying out too much. If the rotisserie chicken is fresh from the grocery store, heat it until it's warm. If you started with a cold chicken from the fridge, heat it for about 20 minutes or until a meat thermometer inserted into the thigh reaches 165 degrees F.

3. To crisp up the skin, remove the foil and turn the heat up to 375 degrees F.
