On a recent trip to the beautiful "Bavarian Village" of Leavenworth, I rediscovered the deep pleasure that comes from dunking various bits of food into molten cheese. At Pavz Cafe, the fondue gets its rich, ripe character from full-flavored Swiss-style cheeses made by the restaurant's owner.
