Brie Passano Healthier Creamy Potato Salad Get the base recipe for Healthier Creamy Potato Salad Makes 2 cups Ingredients 1 pound tiny new potatoes, quartered½ cup plain Greek-style yogurt¼ cup light mayonnaise1 tablespoon zing (such as Dijon mustard, wasabi sauce, or finely chopped red onion)¼ teaspoon each salt and black pepper2 cups prepared vegetables (such as steamed cauliflower rice, cooled; chopped red bell peppers; or chopped fresh kale¼ cup finely chopped fresh herbs (such as parsley, Thai basil, or oregano) Directions Put potatoes in a large saucepan with water to cover.
