Forget the Gingerbread and Build a Churro Log Cabin for Christmas
If gingerbread houses are getting kind of "been there, done that" for you, it's time to shake things up with a log cabin constructed with churros and Christmas cheer.
Churros, Mexican-style fried doughnuts, are seriously hot hot hot right now, and their traditional shape kind of looks like a log. So using them to build an edible Christmas snack shack seems just about right. Take a look at how easy it is to build one:

16 4-inch churros* plus extras for eating
Large flat plate, cake stand, baking sheet, or cake base
1 16-oz package canned frosting
Piping bag with medium star tip and small writing tip
7 whole graham crackers
Mini candy canes
Mini cake decorations (I used holly leaves and gingerbread men)
Shredded coconut (optional)
*The churros I used were generously donated by Seattle's Cantina Leña, a Tom Douglas restaurant. Here's a churro recipe if you want to make your own. You can also skip the frying and make Air Fryer Churros
Step 1. Fill a piping bag with frosting. To build a square base of churros for the cabin, use the medium star tip to pipe a line of frosting along one side of a churro and lay it frosting-side down on the plate. Repeat with the next 3 churros, until you've formed a square. (See video for visual detail.). Repeat with a second layer of churros, laying them frosting-side down on top of the base layer. Stick toothpicks vertically through the churros at each corner to provide structural stability. (Unlike rigid gingerbread, churros are soft and need a little help to stay upright.) Repeat until the walls are 4-churros high.
Step 2. To build the roof, center a graham cracker across the top of the cabin, using frosting to adhere it to the tops of the walls. Lay a second graham cracker next to it; it will overhang the side of the cabin a bit. Adhere it with frosting. Repeat with a third graham cracker on the other side. Measure and cut two pieces of red licorice to the same length as a graham cracker, about 4¾". Using frosting, glue them about 3 inches apart down the center of the middle graham cracker. These will hold up the A-frame roof. To form the A-frame, frost the long sides of two graham crackers and lean them together so two long sides meet at the top and the other two long sides are just inside the licorice lines. Decorate the roof with licorice and gumdrops as desired.
Step 3. To build the front door, break a graham cracker in half widthwise, spread it with a thin layer of frosting, and decorate with candy canes and mini cake decorations. Using frosting, glue it to the front of the log cabin. To build windows, break a graham cracker into fourths, spread three pieces with a thin layer of frosting, and decorate as desired. Glue windows to the other three sides of the cabin.
Step 4. Switch to the thin writing tip to pipe frosting icicles along the roofline. Spread coconut "snow" around the house (optional) and sift powdered sugar over the top.
To serve: Put caramel sauce in a bowl and let everyone pull the house apart to eat. (Remember to warn them about the toothpicks!)
