MasterChef alum, Elise Mayfield — aka Smart Cookie — shares her recipe for Coconut Tres Leches Cake, a Mexican-style poke cake soaked in a flavorful mixture of three different milks: coconut milk, sweetened condensed milk, and evaporated milk. To top it off, the cake is finished with coconut whipped cream, toasted coconut, and lime zest.

Smart Cookie's Top Tips:

1. Start the cake the day before you want to serve it because it needs to soak up the milk mixture overnight.
2. Don't worry if your cake dough seems dry — it's supposed to be that way — all the better to soak up the tres leches.
3. Let the cake cool for about 30 minutes before you poke holes in the cake and pour the milk mixture over the top.
