Add grilled chicken to a bed of spinach and you've punched its passport to Florence, Italy -- because culinary tradition decrees that spinach makes almost anything "à la Florentine." Add orzo and sun-dried tomatoes to the mix, and you've trebled this salad's Italian cred. And if you've ever wondered which came first, the Chicken Florentine or the Eggs Florentine -- we'll never tell.
Wait, Spinach and orzo? Aren't they traditional ingredients in Greek cuisine? True. So just for kicks, let's call this salad "à la Grecque." The name works even better if you dress it with olive oil, lemon juice, and Greek seasonings -- which is the actual culinary definition of "à la Grecque." By the way, this recipe doesn't actually call for grilled chicken, but it's always a tasty addition. Try topping it with slices of Greek Style Garlic Chicken Breast.
Before we set sail for India, let's spend just a little more time on the sunny, sandy shores of Greece! "This is a great Greek inspired salad with chicken souvlaki, romaine, bell pepper, cucumber, and tomatoes served with tzatziki dressing," says Bren. "Sprinkle with feta cheese if desired."
This "tandoori" chicken is marinated in mango yogurt, garam masala spices, and lemon juice, then grilled and served with a tangy honey mustard and curry dressing.
"Tandoori chicken gets its name from the clay oven it is traditionally cooked in, the tandoor," explains Chef John. "The chicken is marinated in yogurt and spices, and then roasted in the extremely hot tandoor oven. Don't worry if you don't have a tandoor clay oven sitting in the backyard; a grill will work just fine."
