It's always seemed like an oxymoron: crustless quiche. Isn't that basically just an omelet or a fritatta? I definitely don't mean to knock crustless quicheI think it's a great way to go when you're trying to keep to a gluten-free diet. But I also really like the presentation of a quiche crust, so I came up with a couple recipes that let me have it both ways.


Thin slices of potatoes are layered into small ramekins to make adorable mini quiches. Not only do the potato slices look gorgeous, I love how the edges sticking above the egg filling get crispy.
