Finding a gluten-free chili is relatively easy. (No thickening with flour!) Tracking down a gluten-free chili that's also vegan is a little trickier. This one gets the job done with beans -- baked beans, garbanzo beans, kidney beans, and a black bean soup -- combined with veggies and spices.


This one's paleo-friendly, so it doesn't shy away from the meat. It features ground bison and pork sausage. Coconut oil handles sautéing duties.

No Beef/No Tomato

Here's one for people who don't eat red meat. The plan calls for tan! It's a white chili with cooked chicken breasts, white beans, and Monterey Jack -- and maybe a little sour cream on top. It's ready in just 30 minutes.
