Are cucumber really all that cool? Yes, says science. Given that they're about 90% water—and water doesn't absorb as much heat as air does—the inside of a cucumber is cooler than the outside air temperature. Add in the fact that they're crisp, crunchy, and refreshing, and it's pretty obvious why cucumbers are ideal added to salads or all on their own.
