5 Light and Tasty Spring Soups
The mellow weather and lengthier days of spring always have me craving lightness and a little extra green in my meals. And even though the temperature is rising, I'm not totally ready to let go of soups -- my absolute favorite easy meal category. We suggest you squeeze every ounce of soup weather out of the season with spring soups that show off the season's freshest greens and keep the evening chill away until summer officially takes over. Our five favorite spring soups hit the spot.
Allrecipes member Stephanie Kilmon raves about this popular and simple take on the classic soup for spring: "VERY easy to make, comes out GREAT exactly as directed. I highly recommend adding Parmesan to the top of the bowl when serving."
Spring is asaragus season, and one of our favorite ingredients for springtime soup. "If you want your friends to think you've become an overnight gourmet chef, I urge you to serve this wonderful soup," writes Allrecipes member Linda McLean. To go full-bore fancy, serve it with a seared scallop.
This delicate soup is loaded with veggies and creamy but still light. "I make this during asparagus season when my husband's patch is producing a lot. It is very fresh tasting, and the longer it sits, the better it is," writes Allrecipes member Papergoddess about her recipe.
4. Fennel Soup
Spring fennel bulbs take the starring role in this three-ingredient, vegetable broth based soup. Allrecipes member Adamgodes shared this soup recipe and said, "This soup is so easy to prepare and tastes better than most soups you could buy. Mild onion and anise flavored—it's awesome!"
Chef John's recipe for Italian egg drop soup is the perfect comfort food with a great back story, yet light enough for spring. Serve it with some crusty bread. Allrecipes member sarahfike calls it the "Perfect soup! Easy to make and incredibly tasty." Watch the video to see how to make it.
