One of Our Favorite Baking Bloggers Just Dropped a Line of Easy, Elegant Mixes

Any home cook knows there's no shame in using a boxed mix for cake, pancakes, cookies, or other baked goods. In fact, some of our best baking recipes start with boxed cake mix. And truth be told, baked mixes are often just as good as (if not better than) scratch-made recipes. Because even though we love the ceremony of measuring flour, baking soda, and all the other dry ingredients, there's no denying the pleasure in combining a full mix with a few wet ingredients, and putting a quick bread right into the oven or a pancake batter straight onto the griddle.

So imagine how excited we are to bake with the new Joy the Baker baking mixes. If you don't know Joy, she's a bubbly New Orleans-based food blogger, baker, cake decorator, and cookbook author. She's also a great follow on Instagram for her kitchen creations, recipes, and product recommendations.

If you'd love to bake with Joy, you can also sign up for a May 18 cooking class with her. Based on a class I had with Joy several years ago, you will love every minute. She's filled with energy, ideas, and good laughs. At the event, Joy will teach participants how to make a sheet cake from scratch and make the Blueberry Pancake Muffins.

Knowing Joy's popularity with the baking community (and how quickly a good baking mix can be snapped up by time-crunched cooks and bakers), we'd add these to your cart sooner than later. They're great to keep on hand for busy weekends when you need an impressive, elegant brunch but don't have the time for a complicated menu. The dessert mixes are great, too, for these post-Covid get togethers when everyone's looking to see what new skills people learned while we were safely hidden away.
