With a stunning number of pubs and restaurants, Belgium earns more Michelin stars per capita than anyone else. Flavors are strongly French with a Dutch-German accent. Typical dishes include mussels mariniere, anguilles en vert (eels in green herbs), and waterzooi (chicken cream soup). The Belgians brought the world the endive, the waffle, and limburger cheese; extraordinary chocolates and pastries. Belgian beer is diverse and superb; each type is served in a glass shaped to bring out its flavor. Perhaps most famous is Belgian lambic, fruity, dry and effervescent, and quality-controlled by the European Union.

Spinach and Rice (Spanakorizo)

Made this with orzo instead of rice and added feta and lemon as suggested by the other reviewers. We both loved it and thought it tasted very authentic! I think this is going to be one my favorite recipe!
